COQUILLES ST JACQUES
SERVES 4

12 EACH LARGE SCALLOP
1 CUP FLOUR
2 CUPS SLICED MUSHROOMS
1 CUP WHITE WINE
2 TBL COGNAC
½ TBL DRIED TARRAGON
2 CUPS HEAVY CREAM
1 TBL CHOPPED GARLIC
1 TBL CHOPPED SHALLOTS
1 CUP BREAD CRUMBS
1 CUP SHREDDED SWISS CHEESE
1 CUP BUTTER
SALT AND PEPPER TO TASTE
 
In a large pan melt butter .Mix flour, salt, pepper and dried tarragon roll the scallops on all sides in flour mixture and sautéed in butter till brown on each sides .Reserved scallops in a plate, in the same pan sautéed garlic, shallots and mushrooms for 3 minutes deglaze with cognac reduce by ½ add white wine reduce by ½ add cream reduce by ½ season to taste. Put scallops in an oven proof dish or individual dishes pour mushrooms mixture on scallops topped with bread crumbs and cheese baked in 400 degrees oven for 7 to 8 minutes. Enjoy!
