Green Olive Sauce
½ cup of butter
1 Tbs chopped shallots
1 Tbs chopped garlic
1 cup white wine
1 diced tomato
1 cup pitted chopped green Picholine olives
½ Tbs chopped fresh thyme
2 cups chicken stock
2 Tbs soft butter
Black pepper & salt to taste
In a pot melt the ½ cup butter sauté the chopped shallots garlic till clear, add tomatoes, olives and thyme.
Deglaze with white wine reduce by half. Add sock bring to a boil reduce by half. Add 2 Tbs butter boil for 3 minutes
Season to taste
